Saturday Procastination Project #2

My husband is not a big sweets person.  I haven't exactly figured out if this is a good thing or a bad thing.  It's good because it causes me to not bake as often, but it's bad becuase when I get the urge to bake something, I usually have to eat most of it by myself (he does usually at least try it) or find other people to share with.

Today is one of those days where I want to bake.  Seeing as how I now have 1 test, 3 finals, 3 papers, and 2 presentations left to get done in the next two weeks, what better way to spend my Saturday afternoon than making inside-out carrot cake muffins! 

They aren't as sweet as a carrot cake, but I think they are good.  Caleb told me he didn't like them.  My sister said I could take her some, but once I was making it I realized she wouldnt want any since it has ginger in it.  And for those of you who know my sister, you know how upset she gets about ginger.  Looks like I'll be freezing these puppies and eating them over time.  :-)

My picture, of course, doesn't quite look as picture-perfect as the recipe did, but they turned out pretty good. 

(Oh, and those dishes in the background?  Don't mind those.  They just have my homemade cinnamon rolls and sour dough bread rising in them. NBD.)
